Homemade ghee (clarified butter) #Foodie Friday

It's been a long time since I did a food post. I suppose some of you don't know that I do that sometimes. There is a collection here on Beyond Meds. I also have a food blog that I've not posted on in a long time that has a lot more variation because I was doing it while my diet kept changing and changing as I learned what my body needed at any given time. ...

Salmon on a bed of parsley, garlic, burdock root and artichoke hearts #foodie friday

I don't tolerate fish oil in supplement form, nor any other Omega 3 supplement so I was thrilled to learn I do okay with flash frozen (right upon catch) salmon...(histamine intolerance has its challenges) and Omega 3 fatty acids are very important to heal the iatrogenically injured brain -- anyway...this was breakfast a few days ago: Piece of salmon on top of a bed of burdock root, garlic, parsley & artichoke hearts. … [click on title for the rest of the post]

Butternut squash pasta #foodie friday grain free, vegan, tomato free (oh my)

So I julienned a butternut squash. Julienne peelers are pretty awesome. I use them with zucchini and sweet potatoes too. I intend to experiment further with other veggies as well. This is actually the one I have. I borrowed the picture to the right from google because I failed to take a photo. The picture of... Continue Reading →

Eat anything you want…

Eat anything you want. Just cook it YOURSELF! (says Michael Pollan) I can't eat anything I want in the broad sense given my food intolerances, but I really like this way of thinking. I do cook all my food and I do not eat anything out of a box, can or jar. (with some very few exceptions) It really does change the way you eat in very deep and meaningful ways. And it changes the way you think about food as well. It's been a really great education for me to consider how food comes to my table. … [click on title for the rest of the post]

Apple, caramelized onion and ginger chutney: a recipe in tweets #foodie friday

A recipe in tweets. I announced what I was cooking in a tweet: apple, carmelized onion and ginger chutney currently cooking on stove... Someone requested the recipe and so I tweeted the following: … [click on title for the rest of the post]

Sweet potato chips (fried in coconut oil) homemade junk food #foodie friday

Had a hankering for something crunchy and I haven't eaten chips of any variety in eons (literally several years) ...so I did the only thing I could do in this circumstance...I deep fried my own sweet potato chips in coconut oil... photographed below is one of the batches...I ate each batch as the next batch fried...I'm shameless... … [click on title to read and view more]

Socca flat bread with cilantro pesto #foodie friday (grain free)

Today I only made enough for one serving so I used 1/4 cup of chick pea (garbanzo bean) flour. I tossed in half a small onion, a large garlic clove and a teaspoon of chia seeds. (yes I go crazy with variations) I didn't cook the onion or the garlic, I just tossed them all together with a tablespoon of olive oil and some salt and pepper too and then I blended it all with my immersion blender (my favorite small kitchen appliance). … [click on title to read more]

Butternut squash soup — #foodie friday

I'm in school. Yes. I've started an internet based nutrition program. It means I can continue my education and get certified in something I already kind of do informally while still mostly stuck at home while I continue recovering. It's fun and I'm happy I can do it. I couldn't have done it even 6 months ago. My well-being continues to improve. So with that announcement I'm going to share a post I shared with my fellow students in one of our online forums. It's an informal post about soup I was making, as I was making it. I figured the readers of this blog might enjoy it too. … [click on title to read more]

Sweet potato falafel over salad greens #foodie friday

This is an old recipe I created (with some inspiration for others)  before I knew about my histamine intolerance so it's not good for anyone who is dealing with that issue! Some of the spices, the lemon, and the kefir (or yogurt) are all problematic if you have a histamine intolerance. I just looked for... Continue Reading →
