This is a good little synopsis of how food allergies work. (food intolerances is really a better word for it! but the term allergy is used pretty much everywhere)
Most people with food intolerances have no idea they have them. The only reason I learned about my own is because the impetus to become healthy became so great I started doing lots of research about healing naturally. It’s not worth becoming as ill as I did before finding out if they effect you at all. If you feel at all crappy in general it’s worth finding out if what you’re eating may be part of the problem.
People (including myself for a long time) resist believing that what they are eating may be part of what is making them sick. This is especially true if one doesn’t eat a lot of what is commonly understood to be junk food. Learning how my body responds to what I put in it has been a several year journey that continues. It takes time and patience. Allow yourself both if you choose to venture in this direction.
Dr. Hyman has a lot of good information in general, though I do not personally embrace all his dietary recommendations. I get my information on diet and nutrition from a lot of sources, not all of which do I agree 100%. This is mostly because, ultimately, we need to listen to our own body since in the world of diet and nutrition any and all dogmatic or ideological stances can be argued vigorously (complete with backing by studies). It can be overwhelming and that is another reason one must be patient and take things slowly as they learn what works for their own body.
